This is a great addition to any dinner menu. I particularly like it in the summer because it is fresh and light.
- (2) avocados, ripe
- (2) tomatoes
- Ball fresh mozzarella
- 2 Tbsp olive oil
- 2 Tsp basil (fresh is better than dried)
- Salt & Pepper
- Cube avocados, tomatoes, and mozzarella.
- Place all ingredients in large serving bowl.
- Mix lightly.
- Serve immediately.
Note: This is best day of. It can be a little slimy next day.
