Foodie Friday {Salsa}…

I could eat Mexican inspired food everyday of the week.  For every meal.  I truly love the flavors! 🙂

I am also a bit of a salsa snob.  Any Mexican restaurant is judged by their salsa.  Thus far the winners are {in order}: Loco Lime & Cantina.

Considering how much I love salsa, you would think I love to make it at home.  Not so fast. I hate cutting up tomatoes, onions, ….. etc etc.  It takes too long and, frankly, it’s too expensive.  Jar salsa will not cut it in my house.  I outgrew that by the time I was 6 years old.  Jack’s salsa and Eat Fresh are out too.  I have had too much of each!

My mom has this amazing salsa recipe that she makes in a blender.  Yes, I said blender.  I haven’t made it in years {not sure why}.  I broke out the handwritten recipe last week.  Since then I have made it 5 times in 1.5 weeks.  Raymond and I fight over salsa as much as we fight over desserts! 😉

BLENDER SALSA

  • (28 oz) can whole, peeled tomatoes, drained

  • 1/2 cup onion, diced
  • 1/4 cup green pepper, diced
  • 1 clove garlic, minced
  • 2 Tbsp cilantro, chopped
  • 1/2 jalapeño, chopped (seeds removed)
  • 1/2 Tsp dried oregano
  • 1/4 Tsp crushed red pepper flakes
  • 1/8 Tsp cumin

  • 2 Tbsp red wine vinegar
  • 1 Tbsp olive oil
  • 1 Tbsp brown sugar
  • 2 cloves garlic, minced

  • 1 Tbsp honey
  1. Place tomatoes in blender. Pulse.
  2. Add onion, green pepper, garlic, jalapeño, cilantro, oregano, red pepper flakes, and cumin to blender. Pulse.
  3. Put vinegar, oil, brown sugar, and garlic in saucepan. Bring to a boil.
  4. Reduce by half.  Add honey.
  5. Remove from heat and add to blender. Pulse until mixed through.

  1. That sound really good. I’ve tried lots of salsa recipes and the only one I’ve really liked was made in a blender.
    And I really need to try Loco Lime sometime. There are too many restaurants to keep track of in Charlotte now!

    • Such an easy recipe and SO delicious! Raymond said today, “That is the best salsa ever – I could eat it everyday…all day!”

      Loco Lime is hands down my favorite! $1 Taco night is Tuesday – low cost and a great reason to try it out! 🙂
